Macarons with mango cream cheese filling

Continuing from my Macaron saga – I had great fun matching up the pairs the next morning. Thanks to my unique piping skills, no two macarons were the same shape or size!

For the filling – well…so delighted was I by my lack of total failure the night before; my inflated over ambition again raised its head. No plain buttercream for me! Non non! It must be “Mango and Vanilla Mousseline” buttercream frosting, mais oui!

Yes, well… you can imagine how that went. I don’t even want to post the recipe in case I tarnish the writer with my failure. On the plus side, I ended up with a giant bowl of very delicious tasting mango-flavoured gloop. So to salvage it, I mixed everything with a block of philadelphia cream cheese and pretended that was the original plan.

LO AND BEHOLD – I PRESENT TO YOU:

I think I find photographing them as much fun as eating them! They’re just so delicate and pretty. And you can make them in all sorts of colours.

And it’s good, because this way I can be cheeky and only show the nice ones (and turn them around so the cracks wont show!)

I think you can tell I’m more of a photo-nerd than I am a baker-nerd… because after I took these I ran straight up to my computer so I could coo at the raw files, macarons left forgotten in a teacup on the kitchen table (don’t worry… my brother and my boyfriend very swiftly saved them from their neglected fate)

    Great looking macarons. I had a number of failed batches before I got used to the consistency. It’s a lot about a feel for the recipes as well as following the instructions closely!

    I love the pink colour. It’s so perfect!

      Thanks so much for the comment! Any success I had was entirely thanks to your tutorial 🙂 It was incredibly useful and really reassuring to have all those little notes that went with it. You’re right, so much of the tips and hits aren’t usually explicitly explained – it was so handy everything laid out.

      It’s definitely addictive! I’m already planning my next flavours 😉

      I know…. I haven’t eaten out since my parents left!! terrible! But I still have a post ready about high tea which I’ll finish tonight.

    Oh yummo! These look so pretty photographed like this. I’ve been meaning to attempt macarons & am going to do so using your macaron making post (I need lots of photos, haha)! 🙂
