Cupcakes with Nutella and Cream Cheese Frosting [Good Life Eats]

Oh my god you guys…. believe me when I tell you how good this recipe is. I feel like I have to tell everybody. So chocolatey without being sickly, and the frosting is so good.

But I’ll also put the adjusted measurements me and my friends used (converted and halved because WHOAH the original recipe makes a lot of cupcakes) – mostly for my reference, but feel free to use them if it’s helpful to you!

This batch made 18 medium sized cupcakes.

1/3 cup Nutella
1 1/4 cups plain flour MINUS 2 tablespoons*
1 1/4 cups unsweetened cocoa powder
1 tsp baking soda
1/2 tsp baking powder
1/3 tsp salt
2 eggs
1 1/4 cups caster sugar
1/3 cup softened butter
1 1/4 cups buttermilk

(* the original recipe calls for 1 cup all-purpose flour, and 1 1/2 cups cake flour – but I don’t think we have cake flour in Australia.
This article suggests this for substituting ordinary plain flour: “simply subtract two level tablespoons of flour for each cup of flour used in the recipe”, hence the weird measurement here)

For the Frosting we were a bit lazy, and made one big batch of cream cheese frosting, split the mixture into two bowls, and added a big dollop of Nutella to one half (until it looked good and Nutella-y enough to our liking).

Cream Cheese Frosting
200g softened cream cheese (or one block of Philly)
5 tablespoons of softened butter
3 1/2 cups of pure icing sugar
2 tsp vanilla extract

I got to use my new set of Wilton piping tips woohoo.

    love the two-toned icing! the icing on the cake is so perfect and pretty, it reminds me of a soft serve hehe

      I know!! I think I went a little overboard piping it hahaa… it was a LOT of frosting. But it looked so prettyyy.

      It’s so funn…

      I wanted to do 3 tone like the original recipe, but I couldn’t work out how to fit 3 piping bags into one hehe. Next time fill them up a bit less probably!
